Roasted Salmon with Cherry Tomatoes, Garlic & Kalamata Olives

If you’re looking for an easy dinner that doesn’t leave you with a pile of dirty dishes, this roasted salmon is a great choice. Everything cooks together on one sheet pan, and the combination of juicy cherry tomatoes, garlic, olives and fresh thyme gives the salmon plenty of flavor.

Ingredients

● 1 pint cherry tomatoes, halved

● ¼ cup Kalamata olives, quartered

● 2 tablespoons extra-virgin olive oil, divided

● 4 teaspoons minced garlic

● 1 tablespoon fresh thyme, chopped

● ½ teaspoon salt, divided

● ½ teaspoon ground black pepper, divided

● 1¼ pounds salmon fillet, cut into 4 portions

How to Make It

1. Get the oven ready

Preheat your oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper if you want cleanup to be even easier.

2. Prepare the tomato mixture

Add the halved cherry tomatoes, Kalamata olives, 1 tablespoon of olive oil, garlic and fresh thyme to a bowl. Season with ¼ teaspoon of the salt and ¼ teaspoon of the pepper, then give everything a good stir.

Spread the mixture over one side of the baking sheet.

3. Add the salmon

Pat the salmon portions dry and brush them with the remaining tablespoon of olive oil. Season with the remaining salt and pepper, then place the salmon on the empty side of the sheet pan.

4. Roast

Place the pan in the oven and roast for about 12–15 minutes, or until the salmon is cooked through and the tomatoes have softened and started to release their juices.

5. Serve

Spoon the warm tomato, garlic and olive mixture over the salmon just before serving.
